Zucchini Dressing

4 cups grated zucchini
1 onion, chopped
2 eggs, beaten
1 8.5 pkg jiffy corn muffin mix
1/2 tsp salt
1/4 tsp pepper
8oz grated cheddar cheese

preheat oven to 350

grease a 2qt dish

in a bowl combine zucchini, onion, eggs, corn mix, salt and pepper until mixed. fold in half the cheese. spread into pan and top with rest of cheese.
bake for 1 hour.
