Squash Casserole


2 lbs sliced zucchini
1/4c chopped onion
1 can cream of chicken soup
1 cup sour cream
1 cup grated carrots
1 stick melted butter
1 6oz box chicken flavored stuffing mix

boil zucchini and onion in water for 5 min. drain well. in a bowl combine the soup, sour cream and carrots. add zucchini mixture. mix well. in a seperate bowl combine butter and stuffing mix. put hald the stuffing mixture on bottom of a greased 13x9. spoon mixture over and top with remaining stuffing. bake at 350 for 25-30min.
(i mixed the soup, cream and carrots in the pan with the zucchini that i boiled it in, saved me from washing a bowl...)
