Lemon Blueberry Muffins


1 1/2c lemonade
1c sugar
1/4c oil
1 tsp vanilla
3c white rice flour
1T baking powder
1/2tsp salt
1 1/2c blueberries

Heat oven to 350
In a mixer, combine first 7 ingredients. mix until smooth. add blueberries by hand. stir. line a muffin tin with liners and fill half way. bake for 20min.  Makes 24

***** for scones, add an additional 1c rice flour. drop large dollops onto greased cookie sheet. sprinkle top with course sugar. bake 375 for 15min.******
