Millet Molasses Muffins


1/2c oil
1/4c molasses
1/4c honey
2c brown rice flour
1/4c ground flax meal
1/3c millet
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1c almond or rice milk (plain)
1/2c chopped prunes or raisins

Preheat oven to 350
Stir together oil, molasses, honey. Add remaining ingredients and stir well, but don't overmix. Pour into lined muffin tin. Bake 25min. Makes about 16 muffins.
