Macaroni and "Cheese"


1c rice milk (plain)
2T plus 1t oil, divided
4tsp tapioca starch (cornstarch is fine, if you can use it)
1c mashed carrots, cooked
2c cooked quinoa elbow macaroni
sea salt to taste

whisk together the rice milk, 2T oil and starch in pan. bring to boil over med heat. reduce temp to low. stir in mashed carrots and remaining1 tsp oil. add macaroni and stir until heated through. add salt to taste. serve.
