Morning Glory Muffins

2c flour
1 1/4c sugar
2 1/2t baking powder
2t cinnamon
1/2t salt
3 eggs, beaten
1c oil
2t vanilla
2c grated carrots
1/2c chop nuts
1/2c coconut
1/2c raisins
1 apple, peeled and shredded

in bowl mix the first 5 items well.  in another bowl, beat eggs, oil and vanilla.  stir into dry items just to moisten.  fold in rest.

fill greased muffin pan 3/4th's full or use liners.

bake 350 for 20-25min.
