Gluten Free Chocolate Chip Cookies


1c brown sugar
1/4c oil
1/2c shortening
2 tsp vanilla
1c plus 2T rice flour
1/2t baking soda
1/4tsp salt
2c allergy safe chocolate chips (enjoy life)

Preheat oven to 350
using a mixer beat together brown sugar, oil, shortening, and vanilla. add the flour, soda, and salt. mix until smooth. stir in chocolate chips. using a small scoop or spoon drop onto cookie sheet about 2" apart. bake 8-10 min. cool them remove from pan. makes about 24 cookies.
