Healthy Cookie


1c applesauce
1/4c brown sugar
1/4c white sugar
2 1/2c rice flour
1tsp salt
1 tsp baking soda
1 tsp baking powder
2c dried fruit.....raisins, cranberries, dates, apricots etc.

Preheat oven to 350
In a mixer combine applesauce and the sugars. Add flour, salt, soda, powder and blend well. Stir in fruit. Drop onto cookie sheet, greased sheet and bake 8min. Cook then remove from sheet. Makes about 30 cookies.
