Gluten Free Oatmeal Cookie


1c maple syrup
3/4c shortening
1 tsp vanilla
3c gluten free oats
1c rice flour
1/2 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
1c raisins (optional)

preheat oven to 350
in a mixer, cream the syrup, shortening and vanilla. add in remaining ingredients except raisins. mix well. fold in raisins by hand if using. using a medium scoop or tbsp drop dough onto a baking sheet, flatten slightly. bake for 10min. let cool on sheet then remove.
makes 36 cookies.
