BBQ Potatoes


4 large baking potatoes, baked
1/2 cup butter
4 cups chopped cooked chicken
1/2 cup barbecue sauce
Garnishes: shredded Cheddar cheese, sour cream, cooked and crumbled bacon, chopped green onion 

Cut a lengthwise slit in each potato. Divide butter evenly between each potato.
In a medium bowl, combine chicken and barbecue sauce. Spoon mixture evenly over each potato. Garnish with cheese, sour cream, bacon, and green onion, if desired. Makes 4 servings
