Potato Casserole


2 sticks butter or margarine, melted
32oz frozen string hash browns, not the cubed kind..thawed
1 can cream of chicken
16oz sour cream
1/2cup chopped onion
2cups grated mozzerella cheese
1 sleeve ritz crackers, crushed
1/4tsp salt
1/4tsp pepper

Mix 1 stick of melted butter with ritz crackers in bowl, toss to coat and set aside.
In a large bowl, mix the other stick of melted butter with the rest of the ingredients and put into a greased 13x9 pan. Top with buttered crackers evenly.
Bake 350 for 1 hour
