3lbs sweet potatoes, peeled
1/4 cup butter
1/3 cup sugar
3/4 cup brown sugar
1 tsp salt
1/2 cup water
Cut potatoes into quarters or thick slices. Melt butter in a large frying pan. Add potatoes, sprinkle with sugar, brown sugar and salt. Add water. Cover and cook over medium heat for 20 minutes. Turn potatoes, cover and lower heat. Continue cooking for 20 minutes, turning again once...cook until tender and richly glazed.
