Pineapple Drop Donuts


3c flour
3/4c sugar
2T baking powder
3/4tsp salt
3 eggs
1c milk
20oz crushed pineapple, drained
oil for frying
powdered sugar

in a large bowl combine flour, sugar, powder and salt. in another bowl combine eggs and milk, whisk. add pineapple. stir into flour mixture just until blended.
in a skillet or fryer heat oil to 375. drop batter by heaping teaspoonfuls, a few at a time. fry until golden, about 1-2 min on each side. drain on paper towels and dust with pwd sugar.
