English Muffin Breakfast Casserole



3T oil
1 1/2lbs smoked sausage, sliced
1/2c chopped green onion
14oz pkg english muffins, torn into bite size pieces
2c grated monterey jack cheese
1c grated chedder cheese
12 eggs
2c half and half
1/2c whole milk
1 tsp minced garlic

in a skillet heat oil, cook sausage for 5min. stir often, then add green onion and cook for another 4min until tender. in a 3qt baking dish arrange english muffins in a single layer. top with sausage and onion. sprinkle with cheeses. in a bowl combine eggs, half and half, milk and garlic. slowly pour over muffin mixture. cover and chill overnight or at least 8hrs. uncover and let come to room temp. for 30min. preheat oven to 350. bake for 50min or until set in center. let stand for 10min before serving.
