Corned Beef

2 (3lb) corned beef briskets, with spice packets
2 (12oz) bottles beer
2 bay leaves
1/4cup peppercorns
1 bulb garlic, seperated and peeled

place briskets in large pan. sprinkle with one of the seasoning packets. discard the other one. pour in beer, and fill with enough water to cover by 1 inch. add bay leaves and garlic cloves. cover and bring to a boil. once it comes to a boil, reduce heat and simmer on med-low for 4-5 hours. checking hourly, adding water if needed to keep the meat covered. carefully remove the meat, it will be extrememly tender. set briskets on cutting board and let rest 10 min. slice or shred depending on what you like. serve with cabbage and potatoes
