Lemon Pie Bars


2 c. flour
1/2 c. powdered sugar
1 c. butter, softened

4 eggs
1 1/2 c. sugar
1/2 c. lemon juice
1 Tbsp. lemon zest
1/4 c. flour

Preheat oven to 350F. Combine the flour and powdered sugar. Cut in the butter. Mix well until the dough resembles pie dough. Press the dough into a 9x13 pan.

Bake 15-20 min. or until golden brown.

Beat together eggs, sugar, flour, lemon juice, and lemon zest for at least 1 min. Pour the mixture over the baked crust. Bake the bars for another 15-20 min., or until the lemon topping has set (mine took 15 min.). Sprinkle with powdered sugar when cooled.

Sweet and Sour Meatloaf

1 1b. ground beef
1/2 lb ground pork
1/2 cup crushed cornflakes 
salt and pepper
1 large egg
1 can of diced tomatoes
1/4 cup vinegar
1/4 cup brown sugar
1 teaspoon dried mustard
drizzle of molasses
1/4 of a bell pepper diced

Preheat the oven to 350 degrees. Combine ground beef, ground pork, egg, breadcrumbs, salt, and pepper. Drizzle a very small amount of molasses into the meat mixture. Form a loaf with the meat mixture in a 9 X 11 baking dish. In a separate bowl, combine diced tomatoes, dried mustard, vinegar, brown sugar, and diced green pepper. Pour the tomato mixture over the loaf. Cook in the oven about an hour. Let stand 10 mins. and serve drizzled with sauce.

Granola


2 cups certified gluten-free oats
1/4 cup flax seeds
1/4 cup sunflower seeds
1/4 cup shredded coconut
1/4 cup mini chocolate chips (enjoy life)
1/2 cup sliced almonds
1/2 cup organic natural crunchy peanut butter
1/2 cup honey
1/2 teaspoon vanilla
5 tablespoons coconut oil, melted

DIRECTIONS:
Combine all the dry ingredients into a large bowl. In a small saucepan, combine the peanut butter, honey, coconut oil, and vanilla. Once the peanut butter mixture is combined, mix it with the dry ingredients until the oat mixture is moistened. Press the granola in a shallow pan lined with parchment paper. Bake for 30 minutes at 300 degrees. *The granola will get crispier and crunchier as it cools.
Cool for at least 20 minutes and store in a sealed container.

Tamari Roasted Almonds


1/4 cup San-J Wheat-Free Tamari Sauce
6 oz. almonds (plain, unsalted)

DIRECTIONS:
Combine the almonds and tamari sauce in a medium bowl. Let the almonds marinate with the tamari sauce for about 30 minutes. Drain the almonds. Spread the almonds on a baking sheet and roast at 350 degrees for 6-8 minutes. Loosen the almonds with a spatula. Serve.

Spinach and Spaghetti Casserole


8 oz. spaghetti
14 oz. can quartered artichokes, rinsed and chopped
10 oz. frozen chopped spinach, thawed
1 cup heavy whipping cream
2 cloves garlic
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup butter
1 cup chicken broth
1/4 cup flour
1/4 cup parmesan cheese
Topping: Mozzarella Cheese

Preheat oven to 350 degrees. Cook your spaghetti noodles. While the spaghetti is cooking, melt butter over med. heat and add garlic-cook for about a minute. Add flour and salt and pepper. Cook until flour mixture is bubbly and smooth. Add the chicken broth and cream all at once, whisking until sauce is thickened and bubbly. Stir spinach, artichokes, and parmesan cheese into the sauce. Pour the sauce over the spaghetti in an ungreased casserole dish. Stir until combined. Top with mozzarella cheese. Cook for 25-30 minutes or until the center of the casserole is bubbly.

Chicken Etti


3 c. chicken (cooked and diced)
1 can cream of chicken soup
1 can rotel
1 lb. velveeta cheese
1 (2lb) box spaghetti

Melt cheese and add cream of chicken and rotel. Cook pasta. Mix everything together. Add a little water and cover with cheese. Bake at 350 until cheese is melted. Aprox. 20 min. Makes 2 (9x13) pans.

Banana Cake


1 box yellow cake mix
2 boxes vanilla pudding mix
5 bananas
8oz Cook Whip

Prepare cake mix & pudding as directed on boxes. After baking cake, spread pudding evenly on top. Slice bananas and layer over pudding. Top with Cool Whip.

Tater Tot Casserole



2 lb ground turkey cooked, seasoned, drained
3 2lb bags tater tots
2 cans cream of mushroom
2 cans evaporated milk
2 cans cream of chicken

Brown meat & place in large cass. dish.
Cover with tater tots. Mix soup & milk together.
Pour over top. Bake at 350 for 1 Hour.
Makes 2- 9”X13” pans

Oatmeal Pancakes


2 c. quick oats
1/2 t. baking soda
2 1/2 c. buttermilk
1 c. flour
2 t. baking powder
1 t. salt
1 T. sugar
1/3 c. oil
2 eggs, beaten

Combine oats, soda. buttermilk. Let stand 5 min. In another bowl combine flour, baking powder, salt, & sugar. Combine oat mixture, oil, & eggs. Add dry ingredients & stir till blended. Cook on lightly greased griddle or skillet.

14-16 Pancakes.


Pumpkin Bagels


2/3 cup + 2 tablespoons water, divided
1 package active dry yeast
1/2 cup canned pumpkin
1/3 cup packed brown sugar
1 teaspoon salt
1-1/2 teaspoon ground cinnamon
3/4 teaspoon ground nutmeg
1/2 teaspoon ground allspice
1/2 teaspoon ground cloves
3 cups of whole-wheat flour
1 egg white
1 tablespoon cornmeal
Directions:
In a small bowl, mix 2/3 cup water and yeast and dissolve.  Pour into a large bowl and add pumpkin, brown sugar, salt, and spices (through cloves).  Mix together until blended.
Add flour (approximately 3 cups) and mix until a stiff dough forms.  Place dough on floured surface and knead for 6-8 minutes.  The dough will feel ‘gummy’ and should ‘spring back’ when pushed with your fingers.  When finished kneading, form dough into ball and place in a bowl sprayed with cooking spray.  Flip ball of dough so the top of the dough is covered with the spray.  Let rise for at least an hour.
Preheat oven to 400.
When dough is done rising, punch dough down and knead a few times.  Divide dough into 6 pieces.  Roll  each piece into a ball and then shape into a ring.
Fill a large Dutch oven approximately half full of water and bring to a boil.  Drop bagels into boiling water, two at a time, and boil for 45 seconds on each side.  Remove to a cookie sheet covered with a paper towel to drain.
Spray clean cookie sheet with cooking spray and dust with cornmeal.  Place bagels on cookie sheet. IN a small bowl, mix 2 tablespoons water with egg white and brush over top of bagels.
Bake for 15-20 minutes, or until bagels are crisp on the outside.
Yield: 6 bagels

Delicious Easy Chicken


Preheat your oven to 450ºF.
Mix together 1/2 cup of dijon mustard , 1/4 cup of maple syrup, and 1 tablespoon of rice wine vinegar.  Add 1.5lbs of thighs or chicken breasts to a 9x13 pan.  Pour the sauce over them and coat both sides.  Bake in preheated oven for 40min or until juices run clear.  Serve.
